Recipe Time: Sheet Pan Beef & Broccoli

Steak and broccoli always pair well together, in my opinion.

This weeknight dinner is nutrient-rich and bursting with umami flavors. Make enough for leftovers, because it tastes even better the next day!

You’ll see the beef and broccoli together on the tray above. I usually cook them on separate trays in case their cook times are a bit different.

Ingredients

  • 1.5 lb. flank steak or sirloin

  • 2.5 T coconut oil, melted

  • 4 tsp. arrowroot powder, divided

  • 1 tsp. Nom Nom Umami Stir Fry Powder* or kosher sea salt

  • 1 lb. broccoli florets (about 8 cups)

  • 2⁄3 C Asian Stir-Fry Sauce

  • 2 T toasted sesame seeds

  • 3 scallions, thinly sliced

  • 1 pinch of cayenne or sprinkle of red pepper flakes (optional)

Instructions

Set the oven to 400° F.

While it heats, place the flank steak in the freezer for about 15 min., so it's easier to slice.

Chop the broccoli into florets, with stalks no thicker than 1/2 inch. Set aside.

Slice the steak: if it's a wide piece, cut it in half lengthwise, along the grain of the meat. Then slice it against the grain, into ¼-inch thick pieces.

In a large bowl, season the steak with 1 T arrowroot powder, ½ tsp. of Umami Stir Fry Powder (or sea salt), and 1 T melted coconut oil. Toss well to combine.

Cover a large baking sheet with parchment paper. Arrange the seasoned meat in a single layer.

Toss the broccoli with ½ tsp. of Umami Stir-Fry Powder or sea salt and the remaining coconut oil.

On a second parchment-lined baking sheet, arrange the broccoli in a single layer, then cook both about 10 minutes, with the beef on the middle rack.

While the beef and broccoli cooks, whisk together your Asian stir-fry sauce. In a measuring cup, mix 2/3 C of the sauce with 1 tsp. of arrowroot powder.

When the cooking time is up, the beef and broccoli should be mostly cooked through. Take the pans out of the oven, pour the sauce over both trays, then stir it around so the beef and broccoli are well coated, then rearrange them into a a single layer again on the pans.

Turn the oven to broil, then broil the beef & broccoli on each sheet for 3-5 min. or until the sauce thickens and the meat and broccoli are browned in parts. Test both steak and broccoli for doneness.

Remove the sheet pans from oven, sprinkle on the toasted sesame seeds and sliced scallions.

Serve atop cauliflower rice (Paleo, low-carb) or regular rice.
