Recipe Time: Kelly's Easy Fast Yum Bowls

This colorful bowl was the tasty conclusion to a scavenging mission one day when I needed lunch in a hurry.

INGREDIENTS

• ½ medium (leftover) sweet potato, in slices or chunks

• ½ avocado, sliced

• 2 boiled eggs (pasture-raised are best!; light boil 8-9 minutes)

• scoop of Kim chi (I like Farm Hand brand – daikon, mild; or napa cabbage, spicy)

• drizzle of olive oil

• dash of sea salt & pepper

 

Notes and options…

Can you make it yummier and more nutritious? Of course, silly….

• Top with walnuts or sunflower or pumpkin seeds

• Don’t like Kim chi? Use salsa

• Put all of the ingredients on top of a bed of greens (I’m partial to arugula.)

• Don’t like or have eggs on hand? Use last night’s leftover chicken, burger or salmon.

• No sweet potato? Cauliflower rice, quinoa or another whole grain

 

INSTRUCTIONS

Assemble ingredients in a bowl and eat it up!
