Recipe Time: Chipotle Lime Salmon Salad

Looking for a light summer dinner? Try my easy Chipotle Lime Salmon salad.  It’s also a perfect weekday lunch when the fridge is looking a little hopeless and your next store run is a few days away.

Don’t be surprised how good it tastes! And when you pair this omega-3 rich fish (anti-inflammatory) with avocado, herbs, greens, nuts and seeds and you’re a nutrition superstar! 

Ingredients
• 1 can wild caught Alaskan salmon

• 2 T Primal Kitchen* brand chipotle lime mayo

• handful chopped scallions, onions or chives

• S&P to taste

• squeeze of fresh lemon or lime

Optional boosts for crunch, nutrition and flavor:

• red bell pepper

• jalapeno

• celery

• cilantro

• pumpkin or sunflower seeds

Instructions
Drain salmon and plop into a bowl. Mix with mayo. Add chopped veggies, herbs and seasonings. Squeeze with lemon or lime. Serve on a bed of greens tossed with olive oil, or inside an avocado boat.

* If you don’t have PK brand mayo, no problem, use plain avocado mayo with chipotle powder (or another chili powder) garlic, and extra lemon or lime juice.
